March Muffin Mania

Original Editorial Letter from March 2002:

Welcome to The Recipe Monthly. Spring is just around the corner and it’s the perfect time to bake up and serve a batch of Orange Poppy Seed Muffins or Sour Cream Muffins or any of the other great varieties outlined here.

Thanks for the great response, readers! We received 14 great muffin recipes and are excited to introduce to you, The Recipe Monthly’s March Muffin Mania cook-mag!

Orange Poppy Seed Muffins

Cream together:

1/2 c. soft margarine

Add:

1 c. sugar

1-1/2 c. flour

1/2 t. salt

1/2 t. baking soda

1 T. poppy seeds

1 egg

1/2 c. yogurt or sour cream

2 t. orange juice or 2 T. grated orange peel

Bake at 400º for 17-20 minutes. Makes 1 dozen.

May serve with cream cheese butter: 3 oz. cream cheese, 1/2 c. butter, 1/4 c. powdered sugar, and some grated orange peel.

Pumpkin Apple Streusel Muffins

2-1/2 c. flour

2 c. sugar

1 t. baking soda

1/2 t. salt

1 T. pumpkin pie spice

Combine above in a large bowl and set aside. Combine the followingin a separate bowl and add to dry ingredients, stirring just until moist.

2 eggs, lightly beaten

1 c. pumpkin

1/2 c. oil

Stir in 2 c. chopped apple.

Spoon into muffin cups 3/4 full.

Combine 2 T. flour

1/4 c. sugar

1/2 t. cinnamon

in small bowl.

Cut in 4 t. butter. Sprinkle streusel onto muffins. Bake at 350º for 25-35 minutes. Makes 18.

Sour Cream Muffins

Cream together:

1/4 c. soft butter

3/4 c. sugar

Add:

2 eggs—well beaten

1 t. vanilla

3/4 c. sour cream

1/4 c. milk

Combine dry ingredients in a small bowl and stir into mixture.

1-1/3 c. flour 1/4 t. salt 1/2 t. soda

Pour into prepared muffin tins, sprinkle with cinnamon-sugar.

Bake at 400º for 20 minutes. Makes 1 dozen.

Tasty Blueberry Oatmeal Muffins

1 c. oats

1 c. buttermilk

Soak together in small bowl and set aside.

Combine all dry ingredients in a separate bowl

and set aside.

1 c. flour

1 t. baking powder

1/2 t. soda

1 t. salt

1 T. wheat germ

1 t. cinnamon

1/3 c. brown sugar

Put 1/2 c. oil and 1 egg in a large bowl and add flour mixture and oat/buttermilk mixture alternately. Stir just until moistened. Add 1/2 c. drained blueberries.

Pour into muffin tins and bake at 400º for 30 minutes.

Zippy Orange Crunch Muffins

2 c. flour

1/3 c. sugar

1 t. baking powder

1/2 t. soda

1/2 t. salt

1/2 c. grape nuts cereal

Combine in a bowl, blending well. Combine in another bowl the following, adding to above all at once, stirring until moistened.

2 well beaten eggs

1 T. grated orange peel

1 c. orange juice

1/2 c. oil

Pour into muffin tins and bake at 400º for 20-25 minutes.
